Lad det st\u00e5 tild\u00e6kket, men udenfor k\u00f8leskabet i mindst 12 timer.<br \/>\n<\/span><\/li>\n<\/ol>\n<p>Br\u00f8det<\/p>\n<ol>\n<li>Bland mel, vand, ca. 26 grader varmt, og surdej sammen med en ske, s\u00e5 alt melet er opsuget. Den surdej, der er til overs, puttes i en b\u00f8tte og s\u00e6ttes retur i k\u00f8leskabet. Her kan den holde sig l\u00e6nge - op mod en m\u00e5neds tid uden opsyn, men bliver den for sur, s\u00e5 giv den samme behandling med mel og vand og s\u00e5 retur i k\u00f8leskabet. Lad det st\u00e5 en halv time, f\u00f8r saltet \u00e6ltes i. Dejen er fugtig, men \u00e6lt nogle minutter, s\u00e5 alt saltet er fordelt i dejen. Lad dejen st\u00e5 en halv time og fold den s\u00e5 sammen ved at l\u00f8fte en tredjedel af dejen ind mod midten. Tag den anden tredjedel af dejen og fold den mod midten. Drej sk\u00e5len 90 grader og g\u00f8r det samme. Vend hele dejklumpen, s\u00e5 oversiden kommer til at ligge nederst. Hav en lille sk\u00e5l st\u00e5ende med vand, det er nemmest at vende i dejen med v\u00e5de fingre.Lad dejen hvile 30 minutter og gentag ovenst\u00e5ende.Dette g\u00f8res i alt fire gange. Den sidste gang skal dejen ikke vendes, men i stedet l\u00e6gges i en h\u00e6vekurv foret med et meldrysset viskestykke. Fold viskestykket sammen over dejen og s\u00e6t den i k\u00f8leskabet, mindst 12 timer, men gerne 24, og op til 48 timer.<\/li>\n<li>N\u00e5r br\u00f8det skal bages, varmes en \u00bbdutch oven\u00ab \u2013 eller en st\u00f8bejernsgryde \u2013 op til 230 grader. Br\u00f8det l\u00e6gges forsigtigt i gryden med den side, der vendte nedad i h\u00e6vekurven, opad, og bages med l\u00e5get p\u00e5 i 20 minutter. Tag l\u00e5get af og bag br\u00f8det f\u00e6rdigt i ca. 20 minutter mere.
